Steps ofOther Fruit Processing Line
1. Receiving, Washing, Grading, and Sorting
Typically, fruit preparation consists of receiving, washing, peeling, coring,crushing, slicing, deaerating, refining, as well as additional grading and sorting.
2. Evaporation
During evaporation, water is removed from juice so as to concentrate theproduct. According to the desired final products, specific evaporation methodcan be adopted. The highest evaporation is achieved by removing water whilepreserving the color, texture, and organolepticproperties of the fruit.
3. Aseptic Sterilization and Filling
In closed aseptic conditions, the fruit is heated forsterilization and then aseptically cooled to ambient temperature. Certainfruits are cooled and or stored at ambient temperatures to hold back chemicalalternations that change the appearance. The products are then conveyed todifferent filling machines where fruits are filled at preset ratios and made readyfor labeling and storing.
